Boiled Yam with Turkey Stew (Low-Carb)
Ingredients
- 2 cups yam peeled and cubed
- 300 g turkey meat cut into pieces
- 2 tablespoons olive oil
- 1 medium onion chopped
- 2 cloves garlic minced
- 2 medium tomatoes blended or chopped
- 1 tablespoon tomato paste
- 1 teaspoon paprika
- 1 teaspoon thyme
- 1 cup low-sodium chicken broth
- to taste salt and pepper
Instructions
- Peel and cut yam into cubes, then boil in salted water until tender. Drain and set aside.
- Heat olive oil in a pot and sauté onions and garlic until fragrant.
- Add turkey pieces and brown on all sides.
- Stir in blended tomatoes, tomato paste, paprika, and thyme. Cook for 5 minutes.
- Pour in chicken broth, reduce heat, and simmer until turkey is cooked through (about 20 minutes).
- Season with salt and pepper. Serve stew over boiled yam cubes.
