Steamed Vegetables with Sardines (Diabetes-Friendly & Heart-Healthy)
Ingredients
- 1 cup broccoli florets
- 1 cup cauliflower florets
- 1 medium carrot sliced into thin rounds
- ½ medium cabbage shredded or chopped
- 1 handful spinach or ugu leaves optional, for extra greens
- 1 small onion sliced
- 1 clove garlic crushed, optional
- 1 tbsp olive oil for finishing
- 1 can sardines in water or olive oil drained
- 1 pinch salt to taste
- 1 pinch black pepper to taste
- ½ tsp ginger powder optional, for flavor & anti-inflammatory benefit
- 1 tbsp lemon juice to drizzle before serving
Instructions
- Wash and chop all vegetables.
- In a steaming basket or pot, steam broccoli, cauliflower, carrot, and cabbage for about 5–7 minutes until tender but still slightly crisp.
- Add spinach/ugu leaves in the last 1–2 minutes of steaming.
- In a small pan, warm sardines gently (if using canned in water, you can add a teaspoon of olive oil for flavor).
- Combine steamed vegetables in a bowl, season lightly with salt, pepper, and ginger.
- Place sardines on top of the vegetables.
- Drizzle with olive oil and lemon juice before serving.
